ELEGANT POTATO & ONION PACKETS (Planted Based Dinner Idea)

Ever stumped on what to make for dinner? Sometimes I just want a simple, plant-based dinner idea that won’t take much time or effort.

This week I want to share with you one of my go-to ideas as you can literally add anything you like in these easy oven packets.

Potatoes and onions are always a nice base and then just add whatever else you want inside. I often add carrots.

Serve this elegant packet with a crunchy green salad that is dressed in lemon & oil (and sprinkled with salt) and you have on your hands an exquisite, high vibe, plant-based dinner! (Yes, it’s Vegan too!)

Elegant Potato & Onion Packets

Ingredients are for 1 serving. Multiply the recipe for your desired number of servings.

1 small Russet potato, thinly sliced

1 small Spanish onion, sliced into rings

Salt & Pepper to taste

1 Tbsp Finely chopped fresh parsley

Avocado Oil

Pinch of Dried Oregano

Pinch of Dried Basil

Serve with:

Sautéed asparagus & mushrooms

Instructions:

Preheat oven to 350 degrees F

Tear a long sheet of aluminium foil and place a shiny side down onto the counter.

Place the sliced potatoes and onions onto the middle of the foil. Drizzle over some avocado oil & sprinkle salt & pepper on top.

Sprinkle the dried oregano and basil on top and finish by sprinkling the fresh parsley on top.

Fold the long ends of the foil towards the middle then roll up each of the other sides to form a tightly closed packet.

Place the packet onto a cookie sheet and place in the preheated oven for 30 minutes.

While the potatoes are baking slice mushrooms and chop asparagus into 1- inch pieces.

Sauté these in a little avocado oil and a sprinkle of salt & pepper.

After 30 minutes open the packets (be careful not to be too close when opening the packets as there can be hot steam releasing).

Serve some of the potato/onion mixture onto a beautiful plate. On the side add some of the sautéed mushrooms & asparagus. Enjoy!

HIGH VIBRATION DINNER IDEA: BEANS (TURKISH STYLE)

Looking for a healthy dinner idea?

Well, have I got a recipe for you!

This Turkish Style Beans Recipe is one I first tasted when my boyfriend (now my husband) surprised me with a home-cooked meal after a long day of teaching.

If you’ve watched The Making of a Spiritual Woman Series you know what a surprise and delight this was for me.

Over and above the fact that a man had actually cooked for me, this meal was DELICIEUX!

The flavors blended so well together! This was like no other “bean recipe” that I had ever tasted. I was hooked.

You can substitute the borlotti beans for kidney beans, navy beans, or even chickpeas!

I’m so excited to share this recipe with you as it has a special place in my heart – and on my monthly (sometimes weekly) meal list.

High Vibration Beans – Turkish Style (Barbuyna)

1 Can (drained & rinsed) Pinto Beans

1 medium yellow onion

2 cloves garlic, thinly sliced

1 small carrot, diced

1 small potato, diced

2 Tbsp Olive oil

1 Tbsp Tomato Paste

1 bay leaf

1 tsp Sea salt (or Himalayan salt)

1/8 tsp black pepper

Fresh parsley, finely chopped, for garnishing

Instructions:

Add the olive oil to a medium pot. When the oil is heated, add the onions and cook until they become translucent.

Add the carrots, potatoes & garlic. Sauté mixture for a few minutes.

Add the tomato paste and the drained, rinsed beans and cook for 2 minutes, stirring constantly.

Add the bay leaf, black pepper, salt & enough water to cover the beans. (approx 2 – 2 1/2 cups)

Bring to a boil then simmer for 30 minutes uncovered or until the liquid reduces and it becomes the texture of a stew.

Garnish with chopped parsley and serve along with a salad or serve over rice with a side salad.

VEGAN CURRY “CHICKEN” RECIPE | High Vibration Dinner Idea

Looking for a healthy dinner idea? You HAVE to try this Vegan Curry “Chicken” Recipe! It’s been in my family since I was a child & now my own children ADORE it! Serve it to guests as a very elegant dinner along with a crisp green salad and finish it off with a lemon meringue pie. Mmmm!

It’s so quick to make and is what we call here at The Elegant Life, a high vibration food.

P.S. You can use real chicken if you like, just brown it first. A quick tip is to brown the chicken in butter and just before it starts getting brown, add the onions.

Vegan Curry “Chicken”

1 packet of Quorn Chicken Pieces

1 medium onion

2 Tbsp Avocado Oil

4 cups vegetable, chicken flavoured broth

1/4 tsp black pepper

1 scant Tbsp Curry Powder

1/2 Tbsp. Paprika

1 tsp Salt

2 Tbsp Cornstarch

3 Tbsp Low sugar Ketchup

2 Tbsp Steak Sauce (HP Sauce)

1/3 cup blanched almonds

2 Tbsp dried minced onion

Garnishing Ideas:

Toasted Sesame seeds

Thinly Sliced Green Onion

Instructions:

Preheat oven to 325 degrees F

Slice the onion into rings.

Sauté the onion rings in avocado oil until they become translucent.

Place sautéed onions in the casserole dish.

Measure or make your Broth. Heat the broth in a medium pot.

In a small bowl mix the black pepper, curry powder, paprika, salt, and pepper together. Add a little cold water to mix into a paste consistency. Add it to the warm broth in the pot and stir.

Add the Ketchup & Steak Sauce. Stir and heat well until it thickens.

Add the thickened sauce to the casserole dish.

Add the packet of Quorn Chicken Pieces.

Add the blanched almonds & dried minced onions and stir.

Cover and bake in the oven for 30 minutes.

Serve over Basmati rice and garnish with toasted sesame seeds and thinly sliced green onions.

3 High Vibration, Healthy Oatmeal Recipes

Oatmeal is one of my favourite breakfasts because it’s filling and highly nutritious; even more when I add some special ingredients to it!

I get bored easily, so I like to rotate between these 3 delicious oatmeal options.

To make the oatmeal base for these recipes:

1. Add  1/3 cup oats to a small pot.

2. Pour in 250ml  (1 Cup) coconut milk, or any plant based milk.

3. Stir until mixed well.

4. Turn the burner on to high and heat the mixture until it reaches a boil. Immediately turn down the heat to low and simmer for 1 minute or until mixture thickens.

a) Banana Cinnamon

To the oatmeal add:

1/2 Tbsp chia seeds

Walnuts, as desired

Sprinkle of cinnamon

1 tsp Maple syrup

b) Apple Delight

To the oatmeal add:

2-3 Tbsp Apple sauce (unsweetened)

Pecans, as desired

Sprinkle of cinnamon

1 tsp Maple Syrup

c) Very Berry

To the oatmeal add:

1/2 Tbsp chia seeds

1/3-1/2 cup berries (can be frozen)

1 tsp Maple syrup

HIGH VIBRATION FOODS & RECIPES! | Feel Great, Look Great!

I’m SO excited to chat with you today because I have something for you that I’ve dreamed of creating since I was a child!

I’ve always loved the process of cooking a recipe of deliciousness and then making it look really nice.

As a little girl, whenever I was off sick, I would go in the kitchen to prepare myself a snack or lunch and turn the whole process into a cooking show!
